Richard Lipsey’s Wild Ducks

10 wild ducks (washed thoroughly)
salt and pepper–to taste

3 – 8oz. cans of tomato sauce
2 – 6oz. cans of frozen orange juice concentrate (defrosted)
¼ cup of Worcestershire sauce
1 cup of Burgundy (or your favorite red) wine
¼ cup of Brandy
3 whole bay leaves
3 pods of garlic

Preheat the oven to 450ºF

1. Season the ducks inside and out with salt and pepper and stuff cavity with large pieces of onion and celery
2. Place BREAST UP in a roaster pan and brown in oven 30-40 minutes at 450ºF
3. Remove from oven and discard all drippings from the pan. Place ducks in roasting pan with BREAST DOWN
4. Turn oven down to 350ºF
5. Mix the sauce ingredients in a saucepan, bring to a simmer and pour over ducks
6. Cover the pan and place in the oven
7. Cook approximately 2½ -3 hours or until tender. Baste ducks several times while cooking (the cooking time will vary depending on the ducks)
8. When the ducks are tender, remove bay leaves then plate ducks. Reserve and defat sauce while ducks rest.
9. Pour reheated sauce over ducks before serving.
