Doves with Pears
10 Dove Breasts

2 pears (fillet)

Strawberry Jam


  • Marinade the doves in teriyaki sauce for 4 hours. Season with hot spices and black pepper.
  • Cook the pears in strawberry jam for a few minutes.
  • Prepare lettuce with vinaigrette (olive oil, garlic, lemon peal, balsamic vinegar)
  • Sauté the doves for 2 minutes

Place the pear sauce over the lettuce. Top with the doves. Serve.

Doves in Orange Sauce

10 Doves Breasts

5 tablespoons of orange juice

2 tablespoons of brown sugar

2 tablespoons of butter

  • To prepare the sauce, cook the orange juice, brown sugar, and butter together for 10 minutes.
  • Sauté the doves for two minutes (add salt & pepper to your own tastes) and mix with the sauce.

Doves with Mustard

10 Doves Breasts

1 tablespoon of heavy cream

1 teaspoon of Dijon mustard

1 tablespoon of butter

Melt butter and sauté doves for two minutes.  (Add salt & pepper to your own tastes) Add cream and stir. Add mustard, mix and stir again until hot.
